Super Bowl LV - Food and Fun for Game Day

This Sunday February 7, 2021 is Super Bowl LV.  This year it is the Tampa Bay Buccaneers v. the Kansas City Chiefs and the Buccaneers will have a home field advantage as they host this year’s game at the Raymond James Stadium in Tampa, Florida.

Due to the pandemic there will be limited in-person attendance, but that doesn’t mean that all of us watching at home can’t enjoy some tailgating food and fun!  Today’s blog is all about how to kick off an awesome Super Bowl celebration no matter where you are, including at a senior resident community.  Just remember to do so safely and within your communities Covid-19 guidelines!

Food

Because older adults tend to require special diets due to chronic health conditions, finding ways to lighten up traditional Super Bowl party foods is important so everyone can enjoy the party. From chili to chocolate, we have a few menu options to consider.

  • Skinny up your chili recipe. Chili is a staple at many Super Bowl parties. While it’s easy to make and serve, it can also be loaded with fat and calories. The good news is there are some simple steps you can take to make this party favorite lower in fat, calories, and sodium. This healthy chicken chili is easy to make, delectable and good for you.

Chicken Chili With Pesto

Ingredients

    • 2 tsp. vegetable oil
    • 3/4 cup finely chopped onion
    • 3/4 lb. skinless, boneless chicken breast, cut into bite-sized pieces
    • 1 1/2 cups finely chopped carrot
    • 3/4 cup finely chopped red bell pepper
    • 3/4 cup thinly sliced celery
    • 1/4 cup canned chopped green chiles
    • 3/4 tsp. dried oregano
    • 1/2 tsp. ground cumin
    • 1/4 tsp. salt
    • 1/8 tsp. black pepper
    • 1 (16 oz) can cannellini beans or other white beans, rinsed and drained
    • 1 (14 1/2-oz) can fat-free, less-sodium chicken broth
    • 3 Tbsp. pesto

Directions
Heat oil over medium heat in a Dutch oven. Add chicken and onion. Saute for 5 minutes. Add and saute bell peppers, celery and carrots for 4 minutes. Pour in chiles and the rest of the ingredients, except the pesto. Bring to a boil. Cover and reduce heat to simmer for 25 minutes. Stir in pesto.

 

  • Veggies and dip. A fresh vegetable tray with a few tasty dips is a simple but popular party treat. Substituting out high-fat ingredients can cut the calories and fat—for instance, replacing sour cream with low-fat Greek yogurt. Protein-rich hummus makes a great dip for vegetables and can easily be purchased in the refrigerated section of your favorite grocery store. For a more creative spin on a dip, try pureeing avocado with low-fat yogurt and adding freshly-pressed garlic!
  • Chicken sweet potato skins. Swap bacon- and cheese-laden potato skins for a more nutritious version made with sweet potatoes and chicken. This tasty treat is loaded with healthy fiber and protein.
  • Spicy popcorn. Another quick snack for your guests to enjoy is spicy popcorn. Find a low-fat, butter-free microwave popcorn and spice it up with chili powder or cumin.
  • Rice Krispie treats for grown-ups.  This childhood favorite remains popular with people of all ages. The good news is it is easy to substitute a few ingredients and make this treat gluten- and dairy-free.
  • Dark chocolate strawberries. Another healthy treat that can appeal to everyone’s sweet tooth is strawberries dipped in dark chocolate. Berries are rich in antioxidants and fiber, while good quality dark chocolate contains heart-smart flavanols.
  • No-bake browniesVegan brownie recipes typically rely on heart-healthy nuts like walnuts and almonds, as well as dark chocolate and almond milk. They can make a nutritious and delicious addition to your Super Bowl party menu.
  • Mini Charcuterie Boxes To-Go – Include, meats, cheeses, crackers, fruits, and nuts.

Fun

Get into the Super Bowl spirit on Super Bowl Sunday by hosting a tailgate party for all to enjoy. Cornhole: Teach residents how to play the popular backyard game of cornhole using cornhole boards and bean bags. Divide residents into teams and have each team try to toss their bean bags into their opponents’ cornhole board.

Ladder Toss: Play a game of ladder toss during your tailgate party by setting up the PVC ladders in your room and providing residents with bolos to toss onto the ladders. Award points to the teams whose bolos have remained on the ladders without falling off. The game Disc It is also a fun alternative.

Horseshoes: Take out your horseshoes game as you encourage residents to pitch horseshoes to accumulate points for their team.

Darts: Use a darts set to host a darts tournament for residents and interested staff members. Simply hang the dartboard in an open area and provide participants with balls to show-off their tossing skills.

Washer Toss: Set up a fun, portable washer toss game for residents to play. Because this game is portable, it makes for an easy activity for volunteers to take to the rooms of your bedridden residents for a quick pre-Super Bowl exercise.

Ring Toss: If you have residents with hand motility issues, use an oversized tossing game for your tailgate party, like a super-sized ring toss game. Pass out the oversized, inflatable rings for residents to toss onto a large, inflatable ring base.

After you have the fun and fill your plates with delicious food, be sure to sit back and relax and catch the game at 6:30 p.m. EST on CBS!
